Go to Code 17 on your 10x, and inhibit the switch. I do this when I first
set up a new airplane for the gear and the other aux channels. That way an
inadvertant flip of a switch or knob won't cause a problem.

When you set up the 2nd rudder channel in the programmable mix, be sure to
activate TRIM "ON", and select "INCL" (not NORM or ORIG) as the mix type. That
way, any mixes you do to rudder, such as a throttle to rudder mix, will
affect both servos. This is described on page 43 and 44 of the manual.

Once you get your sub trims set and throws matched in the individual
settings, be sure to use Trace Rate, Code 14, for all subsequent endpoint settings.
This will keep both channels matched.
