Measuring Surface Flatness (was "Cabinet Grade Particle Board")Probably easier for me than for most people, I have plenty of straight edges.  I use 6" wide particle board, run through my table saw, and put plastic laminate on both long edges. 
Lay this on your table, on edge, and shine a light on one side while looking on the other, you shouldn't be able to see any, or very little, light under the straight edge.
