  Being in the lumber business here is what I made my table out of. I used a product called Melamine. It is a particle board product that is covered with a very thin coat of a plastic like product called melamine. It's the same product that you see all of the white furniture that is sold at the discount houses. Comes is a 4x8 sheet and can have be coated on 1 side or both sides. I would recommend both sides. You should be able to pick it up for around $30 a sheet. If the box yards don't handle it you might find it any professional lumber yard.

    It is actually called industrial grade particle board.  They also sell a product called underlayment that is 48"x96", but this product is not as stable in humidity changes.
    If you need to leave your table in a non temp. controlled environment, use a good primer and paint all edges and faces before you build your table.  Build it out of good straight 2 x 4's, on edge, like a mini wall, with the "studs"
    running the short direction, using screws, not nails, and your table will turn out sweet.  Remember to leave a little of the particle board overhanging the edge of the frame, it makes a nice place to clamp something, if needed.
    Humidity changes shouldn't hurt your new table, but direct water will.

      Ken, what exactly is the material you are referring to? Do you feel it would be superior to MDF? I understand the material needs to be supported to prevent sag...I just don't want anything that'll swell with moisture if I need to leave the sheets in the garage...

        We in the "Biz" don't use MDF, medium density fiberboard, to build cabinets, unless you want one "heavy as heck" cabinet, no offense Dean.

        Although the MDF would work fine, though very heavy, industrial grade particle board is what would be used in cabinet making, beneath the veneers.  The material can be found at your local HD, use the sheet that measures 49"x97".

        We do use the MDF in making paint grade door panels and such, due to its superior density.
