The only reason I can think of would be when you have some servos that are NOT HV and some that are in the plane.  But you'd be better off in that case doing what the heli guys did with tail Gyros that couldn't handle HV, regulate the specific channel voltage down between the RX and the servo instead of regulating the whole system between the battery and the RX.

Although you can certainly run any of the HV servos at 5.8V, I'm puzzled as to why you would want to.  You're giving up significant speed and torque, which you paid a premium price to have.  Just use a regulator that gets you up into the intended voltage range for a 2S LiPo.
