I think matched is only as good as the quality of the cells
themselves.  You can have a pack with matched inferior cells.  They are
all equally bad but still matched.  That said, every pack that I have
seen has cells that age differently over time and no matter how matched
the cells are to start with, they all degrade differently and are soon
no longer matched.  This applies to packs that are being discharged at
high rates like out pattern packs.  Cells that are treated lightly like
our 2S lipo packs used for the receivers seem to stay in balance quite
well over time.

If a cell puffs it is easier to replace in a 5 cell pack. Also cheaper
to replace a 5 cell pack if a cell goes pre-maturely and you do not
like to replace cells. You might find use for a 5 cell pack by itself.
Smaller plane, Heli etc. The downside is that you have to add a little
weight for a Y connector to connect both packs. 

A 10S pack is a "little" easier to secure in the plane. I will probably
only buy 5 cell packs from now on. Currently trying out the True-RC
packs.
