I recommend silestone.  It's an engineered granite that has a flatness spec. 
Slate is good too (from pool table mfg) but I was never able to find a large 
enough piece or a cheap enough piece.  A chipped silestone panel large 
enough to hold a plane costs less than $100 around here.

Other materials will conform to any imperfections in the surface.  Even 
glass and solid core doors.  If you want to know how flat your table is, 
roll a flourescent light across it.  Those tubes are flat to within .002. 
you'll see what I mean.
