John,
Find a place that repairs pool tables and get a used/defective slate for 
your surface. I've had mine for over 20 years and it has remained dead flat. 
Of course, you'll have to build a frame out of wood to put it on. I'd 
suggest putting leveling legs on the frame and you'll then have a work table 
that'll last a lifetime.  Hope this helps!
