The JR 10X transmitter has triple rates on the main control functions and I normally set-up the middle rate as the rate where 90% of the flight takes place. That rate is around 80-90% of the high rate. I prefer to use a maximum of 50% stick movement for nearly all flying except for advanced maneuvers (stalls, snaps and spins where at least one stick is pegged). 
 
For resolution at neutral, I use about 30% expo in pitch and roll and practically none for rudder since my rudder output is well damped in my design. Most rudder set-ups require some expo though, so put in around 30-40% for rudder as well.
 
The servos are set-up to at least travel 100% (ATV) and in the case of the elevator, it's set-up to travel 130% of it's range. That improves resolution and torque output. For real torque improvement around neutral, I use digitals all around
 
This set-up requires that the stick movement in flight is limited to produce the desired response, resulting in a toghter control loop. It also allows control authority and options in case I find myself out of position too quickly because of brain fade.

I think I am using only about 30% of my ele stick
right now even at low rates....
