Jerry:
What channel are you using for the slave? Though I don't have a JR PCM 10, I know that with the 10SXII and 10X that channels 9 & 10 are updated only every other data frame, instead of every frame. I suspect that it's the same for your radio, though I'm not 100% sure. This is what causes the lag in response on the newer radios anyway, so if you can go to a lower channel number, that ought to cure it. On an 8103 you should have no problems.

I'll be using either a JR PCM 10 (old) or a JR 8103. When the stick is moved quickly on the 10, one servo lags. I havn't tried the 8103 and am not sure if it will work with dual elevator servos.

Your best bet is using separate channels with a mix. With a Y setup, you will deprive yourself of the fine tuning capability you will need to make the travels correct, unless you get lucky with a perfectly matched set of servos out of the box. A Matchbox will work fine, but you're adding weight, cost and an extra point of failure, however unlikely it is that one will fail. If you use a mix, not only can you duplicate the Matchbox capability, you can exceed it if you have a multi-point mix capability on your radio. A Matchbox is good for center and end points and that's it.

I want to use dual elevator servos. Will a Y harness with a matchbox work or do I have to use two channels? The servos have to be about 1.2" in length. What is the best JR or Hitech servo to use?
TIA
