I don't know how far you want to go with this stall testing,but one way to tell if the wing stalls is to put tufts on the top surface of the wing and a video camera on the tip of the (vert) tail. When the tufts start to go limp or twirl the wing is going into a stall condition. Now our stalls are fairly quick and I don't know if the tufts would react that fast.
At lockheed, we did this to tell when to activate the stick shaker on the pilots yoke + many other tests.
The camera looking across the nose would show the tufts start to twirl and the nose would drop and the ground would come into view. As soon as the tufts straightened the plane started flying again.All this seemed to be in slow motion. I never new how violent or quick the stall happened.Only the crew and the data gathering people knew this.
