On cores I use weights, but on other stuff I've been successful just
using the blue painter's masking tape at regular intervals to hold the
sheeting in place while the polyurethane cured.  I haven't had the
polyurethane push the balsa off yet, but I am also careful to use the
minimum amount of glue (per the method in the previous link).  Since you
will likely be dampening the balsa anyway to form it, that extra
moisture will help kick off the polyurethane and speed the curing a bit
as well.

By the way, my wife got a dress steamer some time ago and that thing is
perfect for steaming balsa to sheet with it.  I use it more than she
does!
