My personal experience with hoppers - from the ST 2300 days - is that they work JUST FINE. Don't know the theory, either, but my intuition tells me that being that much closer to the carb simply makes it that much easier for the carb to draw using it's own venturi suction.  Easier to suck over a shorter distance.  (Although sometimes things can suck over a longer distance, too)

I abandoned the header because of the pipe pressure line, extra fuel tubing requirements, concerns over more possible failure points.  My Perry pump accomplishes the tank on CG, and adds only 1.3 oz overall.  That's less than my header tank and extra plumbing setups weighed.

If weight not an issue, and you can locate the header tank on the centerline of the spraybar, Go for it!!!  IT WORKS.
