No scribes since each judge gets at least one maneuver they don't judge in between each maneuver that they do judge and so they have time to be their own scribes. Good question on direction of flight. Since take-off and landing directions are completely irrelevant, I'm guessing they can usually rely on wind direction to keep the pilots going the same direction.
