Not an expert but I bought into the matched cell concept with my first
packs bought from a company that used to advertise in the K-factor.
Even came with data sheets listing characteristics of each cell. Well,
somewhere between 20 and 30 cycles cells started to puff, and power was
down from 2300 watts when new to 1700 watts at full throttle. I bought
three packs and one now serves as a donor for cells for the other 2
packs. Getting tired of replacing cells though.

I think the matched cells make charging easier with less chance of
differences in voltage between cells but I will leave that to the
experts.
Yes :)

If a cell puffs it is easier to replace in a 5 cell pack. Also cheaper
to replace a 5 cell pack if a cell goes pre-maturely and you do not
like to replace cells. You might find use for a 5 cell pack by
itself. Smaller plane, Heli etc. The downside is that you have to add
a little weight for a Y connector to connect both packs.
A 10S pack is a "little" easier to secure in the plane. I will
probably only buy 5 cell packs from now on. Currently trying out the
True-RC packs.
