I've been using nylon coated fishing cables for over 20 years. I sometimes cross the cables when the geometry dictates for the straightest path from the servo to the control horn. So far no problems with crossed cables. Some planes had as much as two seasons on them before I replaced the cables.

As stated before, I cross the rudder cables routinely... One factor though - my cables are plastic coated Kevlar (Kev-Cord available from AeroSpace Composites) so there's no real chafing or RF potential.
