Keith, I think there was a recent thread on RCU discussing a 2M model with 8S.  

For same relative performance (minus weight impact) you will need to increase the amps by about 20-25% to get the same watts.  You would either need a motor with a higher kV or a higher pitched prop or both to get similar watts.
