Richard, I'm still not sure I've seen a perfect one.  The FAI Powerpoint 
presentation shows where the rolls is supposed to start and stop, and 
yes, you are supposed to be knife edge at the center and momentarily not 
gaining or losing altitude (lots of rudder required, which tends to look 
bad).
