What's the type mount?    The remedy differs.
In similar situations, I've had to use a long (6" or 12") drill, and get
ahold of the bolt on the inside where it comes out of the blind nut, and
hold it tight. (Pliers or a small set of Vise-Grips.)
Then, coming in from the front, I've drilled out the head of the bolt.
Takes some work, and you'll probably use words you haven't heard for some
time, but as a last resort, it works.
Also, if you can get at the heads of the bolts, a Dremel cutoff wheel will
work wonders, but it will scar the front of the mount sometimes.  Few
people will check the front of your mount for beauty, anyway.  Of course,
this only works if the bolt heads aren't countersunk.  Remove the engine
first, of course!<G>
Just a  couple of things I've done.  I probably can think of more.
